This easy growing aromatic spice has flavours similar to thyme and wild oregano. Summer savory likes full sun and grows to 46 cm (18 in). In late May sow 5 mm (3/16 in) deep in shallow furrows at a rate of 1 seed every 2.5 cm (1 in). Cover, tamp, and wait for rain. Space rows 30 cm (1 ft) apart. Thin to just a few plants per 30 cm (1 ft) of row - fresh thinnings can be used in cooking. Harvest in flower by cutting and hanging to dry. Strip the leaves and flowering tops from the dried stalks and store in a glass jar.
